Australian Avocados Foodservice is inspiring chefs and foodservice operators nationwide with its latest collaboration, a one-of-kind avocado menu item created with Sydney’s cult-favourite Inner West cafe, Happyfield.

The limited-edition Avocado Pistachio Dubai Chocolate Sundae launches at the Habberfield cafe on 9 December, just in time for summer.

Co-owners Jesse Orleans and Chris Theodosi worked closely with Australian Avocados Foodservice to develop the recipe, bringing a fresh, inventive take on avocado to the industry. 

The sundae features an avocado cream, made with Hass avocado and pistachio, which is layered between vanilla soft serve and magic chocolate sauce, finished with crushed kataifi. It will be available for one month only, as part of the cafe's rotating specials menu.

Happyfield also created an Avocado Verde recipe, exclusive to Australian Avocado Foodservice and available directly from its website.This smoky, zesty avocado sauce made with charred serranos, coriander, lime, tajín and tomatillos encourages chefs to explore avocado beyond traditional dishes.
